Geboren in San Francisco, Kalifornien, als Sohn von Leon D. Adams und Laurence G. Girard, trat er auch unter den Namen Ernest S. Adams und Ernie S. Adams auf.
Er wirkte im Vaudeville, im Theater und im Film mit. Seine Karriere begann er im Musical-Genre am Broadway. Zusammen mit seiner Frau Berdonna Gilbert bildete er das Vaudeville-Duo „Gilbert and Adams“. Er spielte in über 400 Filmen, beginnend mit der Stummfilmzeit zwischen 1919 und 1948, und war besonders für seine Darstellungen zwielichtiger Charaktere bekannt. Am Broadway war Adams in „Toot-Toot!“ (1918) zu sehen.
Am 26. November 1947 starb Adams im Alter von 62 Jahren an einem akuten Lungenödem im West Olympic Sanitarium in Los Angeles, Kalifornien. Er ist im Valhalla Memorial Park in North Hollywood begraben.
